

Varietal wines from the Vipava Valley
Fresh white wines
All fresh wines are produced following the same procedure. When optimally ripe, grapes are harvested by hand and stored in a cooling chamber at a temperature of 4°C for at least one day. Then the grapes are ground in a crusher/destemmer and squeezed in a press. It is important to squeeze the grapes very cold to prevent various types of oxidation, thus preserving the natural aromas and colour of wine.
Malvasia
Mediterranean variety that thrives well in the Vipava Valley. The wine is dry and golden yellow in colour. Our Malvasia vineyards grow on the shores of Lake Vogršček, where thanks to the reflections of the sun in the water the vines receive a greater amount of light, which has a beneficial effect on this variety that thrives well in sunny locations.
Zelen
It is an ancient indigenous variety of the Vipava Valley, first described in 1844 by the local priest and agronomist Matija Vertovec in his expert book on viticulture. The wine has a delicate aroma with floral and fruity notes and a rich, harmonious and well expressed character.
Ribolla
A typical variety of Goriška brda, which also thrives well in the Vipava Valley. A fresh, harmonious mineral wine, with a flavour reminiscent of almonds and a vanilla-like aroma.
Klarnica
Another indigenous variety, originating from the area around the village of Dornberk, where it was also known by the name “mejina” (deriving from the word “meja” meaning “border” in Slovenian), since it was normally planted around the houses. The wine has a rich and full flavour, expressing a strong floral bouquet reminiscent of blooming acacia and honey.
Sauvignon vert
A variety named Tokaj until this name was protected by the Hungarians. A fresh and aromatic wine with a rich taste and a straw-yellow colour, suitable for all occasions.
Yellow muscat
A sweet wine suitable to accompany desserts or other sweet dishes.
Macerated wines
The perfectly ripe and 100% healthy grapes are harvested by hand and kept in a cooling chamber at a temperature of 4°C for at least one day. Next, they are ground into larger containers and macerated by cold maceration for 5-7 days. The slurry obtained in the process is then squeezed and the mucus is eliminated in stainless steel containers. At the first racking it is poured into acacia barrels and left to mature for at least 1 year. After the maturation period, the wine is bottled.

Red wines
When optimally ripe, grapes are harvested by hand and stored in a cooling chamber at a temperature of 4°C for at least one day. Next, they are ground into larger containers and macerated by cold maceration for 2-3 weeks. The slurry obtained in the process is then squeezed and the mucus is eliminated in stainless steel containers. At the first racking it is poured into oak barrels and left to mature for at least 2 years. After the maturation period, the wine is bottled.
Cabernet sauvignon
High-quality red wine with a dark ruby colour, an elegant bouquet and rich flavour. Very suitable for aging in wooden barrels, especially in the small barriques.
Merlot
Dark red wine with a rich bouquet reminiscent of ripe blackberries and plums, also suitable for aging in wooden barrels. It pairs very well with red meats.

Na posestvu v izmeri 40 hektarjev pridelamo večino hrane in krme (koruzo, ječmen, deteljo, krmne buče), celo voda, ki jo pijejo naši prašiči, je studenčnica iz izvira na naši posestvi.

Sledimo izkušnjam staršev, da trdna domačija potrebuje njivo in vinograd, hlev in gozd, travnik in vrt. Dolgoletne izkušnje pa zagotavljajo vrhunsko kakovost.
